I adore salsa and put it on everything, truly. I was wanting to mix up things up a bit and create a sweet and crunchy salsa to compliment those Indian dishes! This salsa is the perfect combination of sweet, savory, crunchy with a punch of fresh lime, so yummy on my Sow Cooker Tandoori Chicken or Indian Chickpea Fritters!
  • ½ ripe mango - diced
  • ½ red bell pepper - diced
  • ¼ red onion - diced
  • 15 grape/cherry tomatoes - diced
  • 10 snap peas - diced
  • 1 tbsp cilantro - chopped
  • 1 tsp fresh jalapeno - minced
  • ½ tsp garlic - minced
  • ½ lime - juiced
  • ¼ tsp coriander powder
  • Salt & Pepper to taste
  1. Add all ingredients to a small bowl, mix and enjoy!
