Mango Salsa With A Snap
I adore salsa and put it on everything, truly. I was wanting to mix up things up a bit and create a sweet and crunchy salsa to compliment those Indian dishes! This salsa is the perfect combination of sweet, savory, crunchy with a punch of fresh lime, so yummy on my Sow Cooker Tandoori Chicken or Indian Chickpea Fritters!
- ½ ripe mango - diced
- ½ red bell pepper - diced
- ¼ red onion - diced
- 15 grape/cherry tomatoes - diced
- 10 snap peas - diced
- 1 tbsp cilantro - chopped
- 1 tsp fresh jalapeno - minced
- ½ tsp garlic - minced
- ½ lime - juiced
- ¼ tsp coriander powder
- Salt & Pepper to taste
- Add all ingredients to a small bowl, mix and enjoy!
