These easy and curry infused Indian chickpea fritters are crispy on the outside and tender on the inside. With creamy protein packed chickpeas, broccoli, carrots, cilantro and onion, you've got yourself a hearty and health plant based fritter. The best part is dipping the curried fritter into my fresh and vibrant Mint Yogurt Sauce for that perfect balance in flavors. Perfect for an appetizer, on top of salads or throw them into your favorite Buddha Bowl!
  • ⅓ cup broccoli florets
  • ⅓ cup carrot - grated
  • 1 heaping tbsp cilantro
  • 1 heaping tbsp green onion
  • 1 clove of garlic
  • 1 tsp fresh grated ginger
  • 1 tsp fresh lemon juice
  • 1 tsp cumin seed (you can use ½ tsp powder instead if you don't have seeds)
  • ½ tsp turmeric powder
  • ½ tsp madras curry (or curry of your choice)
  • ½ tsp salt
  • ¼ tsp pepper
  • 1 cup canned chickpeas
  • 2 tbsp buckwheat flour or oat flour (see notes to make your own flour - so quick!)
  • Mint Yogurt Dip
  • ½ cup plain yogurt/Greek yogurt
  • 1 tbsp fresh mint - diced
  • 2 tbsp cucumber with skin on - finely grated
  • 1 tsp fresh lemon juice
  • ½ tsp garlic minced
  • ½ tsp coriander
  • ¼ tsp salt
  • Pinch of cayenne pepper (or to desired heat level)
  1. Heat oven to 425 degrees Fahrenheit.
  2. Add all vegetables & spices into food processor until chopped up and well combined.
  3. Add chickpeas to mixture and pulse until just starting to break up, i prefer my fritters a bit chunky so I only process for about 5-10 seconds!
  4. Add mixture into a bowl and add flour, get your hands in there and work the flour through until you are able to form circular, slightly flattened, patties in your hands. Really squeeze them so they hold!
  5. Form eight equal fritters and place on lightly oiled baking sheet.
  6. Bake for 30 minutes, flipping halfway through, until golden brown on the outside.
  7. For your sauce, add all ingredients together and mix until well blended.
  8. Serve hot and let that fresh dip cool them down!
It is so simple to make your own oat/buckwheat flour, don't go buy an expensive bag of flour!
Simply take your oats or full buckwheat groats and add to your high power blender/bullet and hit blend until a flour forms!
