These are dangerously addictive - crunchy, chewy, sweet and an easy snack! Not to mention it's packed with potassium, energy and protein - perfect for a pre or post work out snack. You are welcome!
  • ¼ cup dried banana chips
  • ½ cup loosely packed pitted dates (i use medjool honey dates)
  • ¼ cup whole roasted cashews
  • ¼ cup quick oats (gluten free if needed)
  • ½ tbsp almond butter/peanut butter
  • ½ tsp vanilla extract
  • ¼ tsp salt
  • 2 tbsp mini dark chocolate chips (i use Krisda no sugar added chocolate chips)
  1. Put dried banana chips into food processor and pulse to break down into small chunks - approximately 15-30 seconds
  2. Take your banana chunks and set aside in bowl with chocolate chips
  3. Put dates into food processor (if they are not soft, soak in hot water for 5 minutes beforehand) and process until a sticky paste is formed
  4. Add cashews, oats, nut butter, vanilla, salt to the date mixture and process until a chunky dough forms - approximately 1-2 minutes
  5. Add dough to banana chunk and chocolate chip mixture and fold into dough until well mixed
  6. Roll balls out to preferred size and enjoy!
